Honey starts as flower nectar collected by bees, which gets broken down into simple sugars stored inside the beautiful delicate honeycomb that the bee’s make prior to collecting the nectar. The design of the honeycomb and constant fanning of the bees' wings causes evaporation, creating sweet liquid honey. We then harvest it by collecting the honeycomb frames known as supers that are stored above the brood box, where the queen produces her young. We then slice off the very fine wax cap that bees make to seal off honey in each cell once it is ready for extraction. Once the caps are removed, the frames are placed in an extractor, a centrifuge that rotates, spinning the honey out of the frames. We then strain to remove any wax particels out of the honey before storing it prior to bottling. For the bottling process we only ever warm the honey up to hive temperature so not to damage it in any way before we bring it to your table, So you know your getting all the health benefits of this deliciously, natural yet humble jar of honey.
It‘s a great alternative to sugar, but only consume it in
moderation, as it still behaves like sugar in the body.
